New Zealand: Rotorua – Cooking Corn in a Steam Ven
Our guide threw some sweet corn on the cob into Parekohuru, their largest mineral pool. Mother Nature then took care of the cooking. In 8 minutes, lunch is ready. How smart those Maori people were, to find such a terrific place to live.
New Zealand: Cambridge – Maori Hangi Meal, New Zealand
In the Maori tradition, Hangi, was the preparation of food traditionally wrapped in flax leaves and placed on hot stones at the bottom of a deep pit in the ground. It got it’s name as this earth oven was called a hangi. The food is covered with wet cloth and a mound of earth traps the heat from the stones around the food. The meal is left in the ground for 3-4 hours.
New Zealand: North Island – Thermal Geysers North Island of New Zealand
Thermal pits are common in the central area of the North Island of New Zealand. The Maori used them for cooking and bathing. How clever.
New Zealand: Whakarewarewa – Geysers everywhere in Rotorua, NZ
Hot thermal mineral baths and hot thermal mineral geysers are found all over Maori land in Whakarewarewa, New Zealand. This one shoots up on a regular schedule every day.
New Zealand: Whakerewarewa – Real Mineral Baths
In Whakerewarewa, New Zealand, the Maori way of life is preserved. The hot thermal mineral baths were an important part of their life. Here these hot thermal pools are designed for easy sitting, entry and exit. You can see the younger generation enjoys them too. This was the young lad who earlier jumped into the freezing water for visitors (see earlier Instagram) so it must have been especially yummy for him to soak in the warm water.
Canada: Sault Ste Marie, Ontario – Indian Fare at Rasoi
These are North Indian hot (both ways) appetizers served up in an adorable cart. I love it when you eat in a restaurant where you wind up with a collage of ethnic flavors which highlight Canada as a wonderful kaleidoscope of people. The butter chicken poutine says it all – east meets west in Sault Ste. Marie at Rasoi. In Hindi that name means kitchen, and the northern Indian fare here comes straight from home traditions.

US: Florence, SC – Basically Love at First Bite at Fatz Cafe
At Fatz Cafe, the motto on the menu,“Where everybody is a regular”, is true and that’s because they
get addicted to the warm buttery poppy seed rolls (hint of donut taste to us). Locals come for the fried Calabash
chicken, which is marinated in buttermilk and served with honey mustard, and to enjoy the oldies music and photos of
the Florence/PeeDee area in the 60’s and 70’s.
A popular starter is the fried green tomatoes on cheese grits with remoulade sauce or the shareable hot Cajun firecracker sticks stuffed with spicy shrimp, andouille sausage, onions, peppers, melted cheese in a tomato/basil tortilla. A hit of the meal was the Edisto shrimps and grits made with crumbled bacon in a mushroom burgundy gravy with Parmesan cheese. You could come in for the mahi mahi, spinach salad, ribs, pork chops, burgers or a sirloin steak marinated in hard cider, but you must leave room for the Carolina peach cobbler, which tastes like your gramma made it (vanilla ice cream and walnuts on top).

Canada: Cape Breton, Nova Scotia – Chief Engineer
Etienne Verrier was chief engineer for Fortress Louisbourg from 1725 to 1745 and lived here, in one of the most imposing homes. The military engineers were town planners, architects and construction engineers. They laid out the streets, planned the fortifications, designed all the colony’s public buildings and influenced military tactics in the sieges. He was wealthy enough to be able to serve cocoa to his guests. A pound of cocoa cost the same as a pair or shoes. The cocoa was served hot with spices and sugar and was used medicinally and for warmth and strength.
